The main differences are the power of the motor and the mixer bowl sizes. The VSM500 comes with a 5 quart mixer bowl and 800 watts of power. The VSM700 has a 7 quart mixer bowl and 1000 watts of power. Both Viking stand mixers have the same standard features, colors and attachments or accessories. This can be quite handy if you are moving up from the VSM500 and have all the attachments already. The model reviewed for this article was the Viking VSM 700 Professional Series. I considered a number of factors for this review; power, mixer bowl size, features, warranty, and product reviews:

Power: The VSM700 features a powerful metal gear driven motor that has 1000 watts of power and three speeds. Metal gears last longer than plastic promising years of reliable service.

Mixer Bowl Size: 7 quarts

Accessories: comes with 7 quart stainless steel bowl, paddle, whisk and dough hooks. Additional attachments available include a blender, food processor/slicer, pasta maker, and sausage maker. The splash guard is also an optional attachment available for additional cost.

Features: Viking has a little feature that most stand mixers do not. Easy glide wheels on the base of the mixer allow for easy movement on your counter top. This is a nice feature considering that a good industrial size stand mixer like the VSM700 weighs approximately 27 pounds.

Tilt back construction allows the mixer attachments to be raised and lowered into the bowl easily. The attachments stay above the bowl so that drips don't get on the counter. You can lock it in the up or down position.

Warranty: Viking warranties the motor and parts for 12 full months from the date of purchase under normal household use. The paint or finish, and decorative items are only covered for the first 90 days from the date of purchase.

"O Madonna mia!" I can hear my Uncle Gerardo yelling when I ask him about the KitchenAid Pasta Maker Attachment Kit, also known as the KitchenAid KPEX, short for KitchenAid Pasta Excellence kit. Uncle Gerardo has a love/hate relationship with all things KitchenAid.

He loves KitchenAid because he owns an Italian restaurant. And he hates KitchenAid-because he owns an Italian restaurant! He both loves and hates the KitchenAid Pasta Maker attachment kit in particular because the Kitchen Aid Pasta Excellence Kit takes the drudgery of making pasta and turns into a simple three step process.

How to Make Pasta with the KitchenAid Pasta Maker Attachment Kit
Make the pasta dough. This is as simple as mixing bread, water, eggs and salt in the bowl of the KitchenAid stand mixer using the dough blade. Feed the dough through the pasta sheet roller attachment. The most important thing to look out for is that the dough is not too moist. If it's too moist it will stick to the attachment. Not good. Once you've got your sheet of pasta, feed it through the appropriate pasta cutter attachment. That is, for spaghetti, use the spaghetti cutter and for fettucini, use the fettucini cutter. The caveat here is that you should start off with a thick setting, then gradually move down to the thickness you want. Don't go right to the desired thickness, that will not usually work. Better to take your time here.

And for most pastas, that's it! It's done entirely by the machine. There's only one instance where you have to get manual, and that's when you make ravioli. But ravioli is a different process altogether. When you make ravioli, you are basically making a bunch of 'cheese sandwiches' with pasta as the bread. You have to lay out a sheet of pasta, place the cheese over it in dollops, then place the second sheet of pasta on top, press, and cut-then you've got your ravioli. It's actually pretty simple, too, once you get the hang of it.
